Honestly might be your oven running hot or cold. My grandma's recipes always assumed an oven temp that's 25 degrees lower than what modern ovens actually hit. The topping never browned right until I dropped my temp and upped the time by 15 mins. Your noodles probably went mushy from the extra time trying to fix the water issue. If you try again maybe split the difference and add a little extra breadcrumbs on top to soak up moisture early.

Not sure about the original numbers lining up that tight. Usually forecasts have a bit more variance than that unless the projects are super predictable. Your mileage may vary but even 5% might be tight if things shift unexpectedly.

Those self tappers are game changers for sure, but just a heads up they don't work great on heavy gauge steel like 16 gauge or thicker. You'll get a stripped head or a snapped bit every time on that stuff. Stick with them for the 25-20 gauge studs and you'll fly through the job.
