You warned him and he still made you do it, so that part is on him. But come on, you already knew how this was gonna end the second he said "trim it all off," right? A guy who calls fat a greasy mess has never cooked a brisket in his life, and two hours of fighting him on it would've been a waste anyway. Sometimes the move is to trim it, cook it, hand it over, and let the plate teach the lesson for you. He paid for the meat and he paid for the result, and now he knows why every pitmaster in Texas leaves that cap on. Next time he comes back he'll either listen or he'll go bug somebody else about it.
