Line cook at my new spot told me he never sharpens his knives, just buys cheap ones and tosses them
I was prepping onions next to this guy Marco at a spot in Portland last week and his knife was tearing through the onions like a saw. He said he buys a $12 knife from the restaurant supply on 82nd every few months and just throws it out when it gets dull. Half of me gets it because who has time to sharpen during a rush, but the other half thinks a $40 stone and 5 minutes would save him money and make his cuts cleaner. My old chef would have thrown a pan at him for saying that out loud. So what's the move here, are you a sharpener or a tosser?
