My old system was just a canvas bag full of random tool rolls. I mean, it worked, but I was always fumbling for the right screwdriver head. Seeing a photo of a clean pegboard setup online last year finally convinced me. I spent a Sunday putting one up in my own workspace. Now the most common tools are just right there, and I don't waste time at all. It seems so obvious now, but I had to see it to get it.

Ever tried that tallow trick with a pork shoulder? I did it once on a whim when I was out of apple juice for spritzing. Just used some saved bacon fat instead, and man, it made the bark so much better and the meat underneath stayed crazy juicy. Kinda felt like cheating, lol.

Maybe in your shop, but the pressure is real over here. Customers come in with half-baked ideas from TV and get upset when we don't have some specific cut they saw Gordon Ramsay use. It's not just a loud few online anymore, it's changing what people expect to find at the counter. That five minutes of education is now twenty explaining why their Tuesday tacos don't need wagyu. Basics pay the bills until the guy down the street starts offering the fancy stuff they keep asking for.
