A half jar of pesto and a can of white beans is pretty much the perfect save, and the fact that your 9 year old wanted seconds says it all. Been there way too many times, standing in front of the fridge at 7pm with nothing thawed. My own rescue is a can of chickpeas dumped in a pan with garlic, olive oil, and whatever greens are wilting in the drawer, then tossed with spaghetti and a big squeeze of lemon. Sounds fancy but it takes like ten minutes and my kids eat it without complaining, which is the real win. Something about beans plus pasta water makes a sauce that feels like you actually planned it. That pesto trick is going in my back pocket for the next frozen chicken night.
