Shoutout to the old timer at the Wichita contest who told me to wrap my brisket in butcher paper
I thought he was messing with me. I had always used foil and figured paper was just some trend. He said "try it on your next cook, worst case you lose a $40 brisket" so I did it that Saturday on a 12 pound packer. The bark came out way better and it kept more moisture than I expected. I checked my temp log and the stall pushed through about 40 minutes faster too. Now I'm kicking myself for not trying it 3 seasons ago. Anybody got a paper brand they swear by, or is it all about the same?
