Honestly I just go by feel too, usually about a tablespoon per pound of fries. Made the mistake of using too much once and ended up with this weird gummy coating that was like eating paste. The bag shake method is key though, I toss em around for like 10-15 seconds until you can barely see the powder anymore. Then I let them sit on a paper towel for five minutes before frying so the starch really sticks. Took me 6 months to realize I was sharpening my chisels backwards

I ended up just tapping the chisel against the side of my workbench to feel for a burr after I took it off the stone. That did the trick for me, saved a lot of guessing.
