PSA: Our local market is suddenly all about fermented veggies
Was at the weekend farmers market. Saw four new booths just for fermented foods. Mostly pickled carrots and beets. One lady makes a mean fermented salsa. Uses tomatoes from her garden. Lets it sit for a week in crocks. Tried some, it's tangy and fresh. My buddy two streets over started a fermentation club. Now everyone is swapping jars on porches. Kind of wild how quick it took off.

Ask yourself why fermented foods exploded here. The market booths and club swaps point to a community trend. Did a local influencer or news story start it?

Honestly, you see it everywhere now, like that huge kombucha display at the downtown health food store. Tbh, I'm more curious about who's actually making all this stuff. Are there any local homebrewers who got big and started supplying the booths?

Actually most of those booths are just neighbors scaling up their porch swaps, not professionals. @jennifer_rivera it's still pretty much all homebrewers, just making bigger batches. Doubt anyone's getting big off pickled beets.
