My pour-over tasted sour for months until a cafe owner in Asheville pointed out my water

I was convinced my grinder was the problem, but the owner of High Five Coffee watched me brew and asked about my water source. I'd been using straight tap water from my apartment, which is very soft. He explained that soft water can under-extract, leading to that sour taste, and suggested trying a third-wave water mineral packet. Has anyone else had a major flavor shift just from changing their water?

Straight tap water from my apartment" was my exact problem too.

Yikes, maybe the pipes themselves are the real culprit here.
