That guy at the farmers market was right about not washing my sourdough starter

Last spring I had this super runny, lifeless starter that just wouldn't double. Some older dude selling honey at a booth in Portland saw me complaining about it and said 'stop washing it so much, just feed it less water for a week.' I thought he was nuts because every video online says 1:1:1 ratios are gospel. But my starter was basically soup so I tried his way - did 1:1:0.7 (flour, starter, water) for like 6 feedings. By day 4 it was bubbling like crazy and now it's the strongest one I've ever had. Anyone else find that the standard ratios don't work for everyone?

Man that's the thing about experts, they tell you there's one right way to do something but real life doesn't care about rules.

rubysingh hit it right - experts act like there's a universal guidebook but life doesn't read it. I notice this with all that "perfect routine" advice online too. They'll tell you the exact morning routine that works for every person, but half the time you're just trying to get out the door without forgetting your keys. Real life is way too messy for one playbook. People sell certainty because it sounds confident, but actual living is all about figuring things out as you go.

Wait, are you saying they actually act like there's only one playbook for everything? Isn't that why experts are always wrong about half the stuff that actually happens?
