Ngl, I'm all for the beans though. They soak up all that flavor and make it feel more like a meal to me.

My friend swears by that coarse ground chuck method too.

My Texas uncle taught me to use two pounds of coarse ground chuck for that meaty texture. The beans just get in the way and make it soupy, so you're right to skip them. Once you try it that way, you'll never go back.
