Is hand folding dumpling wrappers really worth the extra hour?
I spent $15 on a small pasta roller to try making wrappers from scratch, and honestly my batch came out way thicker than store bought ones. My buddy swears handmade wrappers are the only way but I felt like the effort didn't match the taste difference. What do you all think, is handmade worth the hassle or just a flex?

What did you use for the filling with those thick wrappers? Because I bet if you nailed the dough hydration and rested it long enough, the thickness issue goes away. Store bought are fine for a quick meal, but handmade wrappers have this chewy texture that soaks up sauce better. Your pasta roller might need a few tries to get the thickness right, mine took three batches before I figured out the setting. Did you add any oil to your dough? That can really change the texture and make rolling easier.

Oh man @miles_young59, you're asking the wrong person about dough science lol I barely measure anything half the time, just dump flour and water in a bowl and pray it works out. My pasta roller is still in the box from Christmas two years ago so I just use a wine bottle to flatten stuff out.
