Can we talk about hitting 1000 pounds of coffee roasted in my garage?

I hit that milestone last Sunday and honestly I didn't even realize I was that deep into it until I counted up my bags lol. Has anyone else had a hobby creep up on them like that without noticing the numbers?

You got me thinking about my sourdough starter situation, where I'm pretty sure it has more hours logged in my kitchen than I do. My husband just asked why we have five different types of flour and I said "for science" like that explains anything. That 1000 pound mark is serious, I'm still trying to figure out how I ended up with a second fridge just for dough.

Hang on, are we sure we're not overcomplicating bread? I've been making perfectly good loaves for years with just all-purpose flour and a starter I feed maybe once a week. That second fridge for dough feels like a solution looking for a problem (and an expensive one at that). Five types of flour is fun for experimenting but when you really break it down, most recipes work fine with basic stuff. Maybe the real secret is just learning to work with what you already have instead of turning your kitchen into a lab.
