Always booked my Lisbon stays a week out, never had a problem finding a good spot.

I used to wing it with last minute bookings too, but Lisbon was the city that finally proved me wrong. Got burned during a festival weekend and ended up sleeping in a terrible airport hotel for way too much money. Now I book at least a few days ahead, especially for popular spots. The peace of mind knowing I have a decent place to crash is worth the small amount of extra planning.
