Heard a librarian talking about a show's pacing and it clicked for me

I was at the library picking up holds and overheard two librarians talking about “The Diplomat” on Netflix, saying the slow build makes the payoff way better. It made me realize I’ve been bouncing off shows that rush through their plots in the first few episodes. Anybody else find that shows with slower pacing end up being more bingeable in the long run?

Is it really that deep though? I mean, are we overthinking TV pacing now like its some kind of art form? Slow burn shows put me to sleep half the time, or I forget what happened when the next episode finally drops. I'd rather they just get to the good stuff and not waste my time with twenty minutes of people staring at walls. Maybe I'm wrong, but I feel like people just like saying their favorite shows are "slow burn" to sound smart.

Some shows seriously commit to the bit though, not my fault if yours is just boring.
