Rant: people who flip ribs every 5 minutes at a competition
I was at a local cookoff in Tulsa last weekend and watched a guy spin his rack like a rotisserie chicken. Every time you flip you lose bark and juice, just set it and let it go for at least an hour. Has anyone else noticed competitors overcooking their ribs by fidgeting too much?

The guy letting his ribs turn into leather on purpose is honestly worse than the flipper. Makes me wonder if he's even checking temp at all.

Honestly, I once flipped a rack so many times at a backyard cookout I convinced myself I was making it "extra smoky" while my neighbor just laughed and handed me a beer.

Wait is flipping the rack even that big of a deal though? I mean if you're not moving it every 5 minutes you're basically just letting the meat sit in one spot and get uneven heat. Like idk, barbecue is about managing the heat not just standing there. A buddy of mine leaves his ribs completely alone for the whole cook and they turn out like leather every time, so maybe flipping it a few times isn't as dumb as people say.
