My protein muffin experiment resulted in edible hockey pucks.

In my experience, swapping applesauce for oil turned them into dense bricks. Your mileage may vary, but I'm back to buying my snacks.

Is there a secret to protein baking that I'm missing? My last attempt at brownies could have doubled as doorstops. I've accepted that some things are just better store-bought.

Swapping half the protein powder for cocoa powder made a huge difference for me. Those dense brownies usually mean too much dry mix. Adding an extra egg white kept things moist without messing up the macros. My last batch was actually fudgy and held together well. It's all about balancing the dry ingredients with enough wet stuff.
