Shoutout to the baker at the Eugene farmers market who changed my mind on sourdough starters

Honestly, after she told me 'your starter isn't a pet, it's a tool, so stop feeding it daily if you only bake twice a week' at her stall last Saturday, I stopped wasting so much flour and my loaves actually got better.

Remember you can also freeze a starter for months if you need a long break.

Totally agree with that baker's advice. I keep mine in the fridge and feed it once a week, @the_xena, and it works great for my weekend bakes. It really does take the pressure off.
