TIL at a diner in Boise they serve air fryer 'fried' pickles that are way crispier than my oven version.
The cook told me they use a light spray of avocado oil and a 400-degree cook for 8 minutes, flipping once halfway through.

Restaurants have the budget for commercial air fryers that just hit different. My home unit can't get that same blast of heat they get from a big kitchen model. The spray helps, but the machine itself is half the battle. What brand is your home air fryer?

You're right about the machine being half the battle. My cheap home brand just can't compete with that commercial power.
