Rant: My mom told me my air fryer chicken was 'dry and sad' last Sunday

I spent a whole hour marinating chicken thighs in buttermilk and spices, then cooked them at 380 for 18 minutes. She took one bite and said it was like eating a shoe. I followed a recipe from a popular blog too. Now I'm wondering if I need a meat thermometer or if my air fryer just runs hot. Has anyone else gotten roasted by family for their air fryer dinners?

Yeah, I remember reading something about how acidic marinades can actually toughen meat if you leave them too long. Some chef on a food blog said the acid starts breaking down the proteins too much after about 30-45 minutes, and an hour could be pushing it depending on the cut. So maybe her mom was onto something, even if it sounded weird. I've definitely had chicken get a weird mushy texture from a citrus marinade that sat too long, so I take that advice seriously now.
