Man I couldn't agree more with @michael_coleman10 but also I'm the worst offender here. My repo has like 15 different "hello world" projects in 8 different languages because I keep second guessing myself. The real joke is I've spent more time researching which stack to use than actually coding anything useful. Your mileage may vary but I finally just stuck with Python and Flask even though I know it's not trendy anymore. At least now I have a half finished app instead of nothing at all.

inNearly lost my dog because of a loose collar buckle
Bought a no-pull harness for my dog once, convinced it would solve everything. First walk, he spotted a squirrel and I did a full faceplant into a pile of leaves. So yeah, maybe it is that deep or maybe I just need to accept my dog is a chaos agent and I'm along for the ride. In my experience, labs are gonna lab no matter what buckle you throw at them.

Oh man, yes, you nailed it! People always underestimate how long it takes to break down a pile of onions without turning them into a mangled mess. I've seen new cooks try to go fast and all they get is a bunch of uneven chunks and a pile of fingers that look like they lost a fight with a cheese grater. That 3 to 4 minutes per pound is pretty spot on for a good dice where everything cooks evenly. If someone claims they did 5 pounds in under 10 minutes on their first try, I'd bet they skipped the root end trimming or left half the skin on. Keep an eye on the knife skills before you start timing them!

Ended up with a drywall patch the size of a dinner plate" yeah I've been there. My trick now is to take a strong magnet and just slide it around the wall before I even pick up a drill. Catches the screws and nails in the studs without all the guessing. Saves me from patching craters later cause the cheap electronic finders lied to me again. That lazy owner shortcut stuff is everywhere in these old places, it's like people just assume nobody will ever need to hang anything heavier than a picture frame.
