Small drywall guy gave me the best advice I've ever gotten on mudding

Was working a big flip near the North Valley when an old timer patching a closet ceiling told me to stop using the pan and just load the knife straight from the bucket. Saved me at least 45 minutes per room and I get way fewer air bubbles now. Has anyone else tried this or am I late to the party?

I mean, loading from the pan lets me control how much mud I'm actually putting on there. When I go straight from the bucket I always end up with too much or too little and have to keep going back for more. Maybe it's just me but the pan keeps things more consistent.

Pan's just extra cleanup... straight from the bucket all day.
