DAE think vegan recipe videos cut out too many steps?

I was excited to try a vegan stir fry from a tutorial, but it jumped from chopping to serving in seconds. My vegetables were undercooked because they didn't show the sauté time. Why don't video makers include all the important parts?

Tried a vegan shepherd's pie tutorial that skipped the roux making entirely. My "gravy" was just flour and broth soup because they cut to the oven shot. Felt like I needed a cooking degree to fill in the blanks. These edits save time on video but ruin dinner.

That's a classic problem with recipe videos now, @kellys78. They chop out the boring bits, but those are often the most important parts. Ever think they do it so you'll watch more ads while searching for the full method? What's the point of a tutorial if it leaves you more confused? Saving a few seconds in editing shouldn't mean ruining someone's meal.

Ugh, that's the worst. I had the same thing happen with a vegan pot pie recipe last fall. My filling was basically brown water. What finally worked for me was ignoring the video and just cooking the flour and broth mix on the stove for way longer than I thought. You gotta let it bubble and get thick before you add anything else. It feels wrong to just stand there stirring, but it works every time.
