Rant: That 'fast-dry' lacquer from the big box store cost me a whole refinishing job and $300 in materials.

It blushed and clouded over on a simple end table in my humid garage, forcing a full strip and restart, so has anyone found a brand that actually works in high humidity?

That humidity is a killer. Try a dehumidifier in the garage first, then a slower-dry oil-based varnish.

How many hours do you usually let the dehumidifier run before you start applying the varnish? I've had mixed results trying to time it right.

Yeah, that slower-dry oil varnish was key for me too. I ran the dehumidifier for a full day before starting, and kept it going in the corner while I worked. It made a huge difference, no more tacky finish.
