The fermented drink stand at my farmer's market has doubled its flavors since spring.

Last weekend, I saw new kombucha and water kefir on the menu. This growth is happening fast (I remember when it was just one guy selling pickles). Are we hitting peak fermentation, or is there more to come?

Could see them adding fermented foods next, like kimchi or sauerkraut.

Totally get what you mean about it growing... I had the same thing with my ivy. Just started pruning it more often and that seemed to help.
