Picked bone-in over boneless for my grandma's pot roast recipe

I always used boneless chuck roast because it seemed easier, but last Sunday I decided to try bone-in like my grandma used to do. She always said the bone adds flavor and keeps the meat from drying out. I cooked it low and slow for about 4 hours at 325, and honestly the meat came out way more tender and the gravy had this deeper taste. Has anyone else switched and noticed a big difference?

Oh I totally feel you on this, I had the exact same experience when I finally gave in and tried bone-in after years of thinking boneless was the way to go. That deeper flavor in the gravy is exactly what convinced me, and now I honestly feel a little silly for resisting for so long. Grandma really did know what she was talking about (as they always do, right?).

That thing about the roast drying out is SO true. I remember one time I made a boneless chuck roast for a Sunday dinner and it came out tough and stringy even though I cooked it low and slow. When I switched to bone-in, the meat literally fell apart with just a fork, no joke. The bone actually acts as a heat conductor too, I read somewhere that it helps distribute the heat more evenly through the meat. So you get this perfect tender texture from edge to edge instead of that dry outer layer you sometimes get with boneless. Now I automatically ask the butcher for bone-in cuts unless the recipe specifically calls for boneless, it really does make a WORLD of difference.

A friend of mine swore by boneless cuts for years because she hated dealing with the bone. Then she made her mother's old Sunday roast recipe with a bone-in chuck and called me up the next day just raving about it. She said the meat practically fell apart and the gravy had this rich, savory note she never got with boneless. Now she won't go back, even told me the bone helps keep the roast from drying out in the oven. That conversation is what finally convinced me to try it myself.
