Old neighbor swore by using canned tomatoes over fresh in winter soups

My neighbor Mrs. Chen told me last December that canned San Marzanos beat fresh hothouse tomatoes for soup every time. I argued with her for weeks until I tried it with a batch of minestrone and felt like a fool. Do you find canned tomatoes actually hold up better than fresh in cooked dishes or am I just bad at picking produce?

Your neighbor was right, and it stings a little to admit it. Canned tomatoes are picked at peak ripeness and processed within hours, so they actually have more flavor than those pale winter tomatoes every time.

Read an article from a food science blog that said canning locks in the natural sugars before they have a chance to turn to starch. That explains why a San Marzano from a can beats a hothouse tomato every time, no contest. The color alone tells you everything about the flavor.

Canned tomatoes go through like zero storage time before they're sealed, so they skip all the texture breakdown fresh ones get sitting around. My buddy runs a chili contest and he won't even look at fresh tomatoes after November.
