A guy at the Spokane farmers market told me to stop tossing my carrot tops, and now I feel dumb
I was chatting with this older guy named Ray at the Spokane farmers market about 3 weeks ago and he asked what I do with the green tops after I buy a bunch of carrots. When I said the trash, he just shook his head and told me to blend them into pesto with some walnuts and parmesan. Tried it that same night and honestly it was better than the basil kind, plus I got like 2 extra cups of food out of stuff I was throwing away. Anyone else have a swap like that where you realize half your pantry scraps were meals the whole time?
Blend those tops into anything green and you win twice, more food and less trash. I do the same with beet greens and radish tops and it beats paying for spinach. Ray knows what he is talking about.
