Why does nobody talk about how cafe water ruins pour overs?

I got a TDS meter after that coffee shop on 6th Street pulled out their fancy water report and now I'm torn between chasing their precise mineral profiles or just sticking with my tap water that’s made good cups for years, so what side do you land on?

Nah TDS meters don't tell you the full mineral story though.

@grant.felix you got a point there. TDS is just a rough number, it doesn't tell you if you're dealing with good minerals like calcium or bad stuff like lead. I've had tap water that read low TDS but tasted metallic, so something was off. Plus some bottled waters with higher TDS from natural springs actually taste way better. Are you using any separate test strips for specific minerals or just going by feel?
