I timed both last week and the cheap cone took 4 minutes from grind to cup while the fancy machine took 11 and still tasted flat, so now I want to know if anyone else has a cheap setup that beat their pricey one.
Something people overlook is the water temp thing. That $90 machine probably heats water to like 180 and never tells you, while you're pouring just off boil from a kettle and getting way better extraction without even knowing it. My old Cuisinart had the same problem, flat and sour every time, and I blamed the beans for months. Once I started checking temps with a cheap thermometer the whole game changed. The machine wasn't broken, it was just lying to me about being hot enough.
180 is being generous for a lot of those cheap drip machines. Most of them run closer to 165 to 170 at the brew basket, and it's worse right after the first cup because the heating element can't keep up. The part that gets people is that sour taste comes from under-extraction, so they keep grinding finer and finer trying to fix it when the real problem is the water never got hot enough to pull anything out. Worth knowing too that a thermometer in the basket only tells you the temp at the start, it drops fast as the water moves through the grounds.
