Hot take: cold brew is overrated and I'll die on that hill

Last week at a local shop in Portland, the barista told me I was "missing the complexity" of their 20-hour steeped batch... I just wanted a hot cup of coffee that didn't taste like dirt water. Has anyone else had a hard time finding a place that actually makes a decent pour-over?

Try asking for a pour-over at a shop that roasts their own beans.

I read a coffee blog last week that said water temperature matters more than the brewing method for a good pour-over. The ideal range is usually between 195 and 205 degrees Fahrenheit. Most shops don't check their water temp unless they really care about the details.

That thing @susan_wright34 said about water temp is spot on, it's like how people don't realize timing matters just as much as ingredients in almost everything. I see this pattern a lot with coffee and even with cooking at home, everyone chases the fancy method but skips the basic details that actually make it work. Maybe the barista was more focused on the steep time than the heat, which explains why your pour-over was a miss.
