Cold brew on a whim turned out bitter and sour at the same time

I steeped 1 cup of coarse grounds in 4 cups of water for 18 hours on the counter and got this weird dual flavor that was almost undrinkable. Turns out my tap water here in Phoenix is too hard, so now I'm using filtered jugs and dropping it to 14 hours. Anyone else fight water chemistry with their cold brew?

Hard water ruins everything, mineral drops fixed mine after I switched to filtered and cut the steep time.
