Pro tip: Barista told me to rinse my filter paper first. I didn't. Regretted it.
Guy at a shop in Seattle said rinse the paper filter before brewing. I thought it was extra work. First cup had this papery taste that killed the beans. Took me 3 batches to realize he was right. Anyone else skip this step and mess up a good pour over?

Rinsing also warms up the whole dripper and mug if you let it sit for a second. That little bit of heat retention makes a big difference in extraction temperature. I got a gooseneck kettle and started timing my pours too, but honestly just rinsing the filter was the biggest single upgrade for the least effort.

Rinsing the paper is non-negotiable if you want clean coffee. That papery taste comes from the paper fibers and manufacturing dust. It ruins the whole brew. Took me one bad cup to learn that lesson. Now I always rinse with hot water and dump it. Keeps the flavor pure.
