I finally lost half a lamb primal to a dull saw blade and it cost me $85
Was breaking down a whole lamb last Tuesday morning at the shop, third one of the day, and my band saw blade was past due for a change. I kept telling myself I'd swap it after this last primal because the lunch rush was coming and I was already running behind. Big mistake. The blade grabbed about four inches into the loin section and tore through instead of cutting clean, ragged the edges so bad I couldn't sell the chops as chops anymore. Had to trim off so much ragged meat that I lost close to 3 pounds of sellable product, plus the loin looked like a dog chewed it. Ended up turning the rest of that primal into ground at a way lower price per pound, and I tossed the blade right then and there. $85 in lost profit on one lamb because I wanted to save 10 minutes. Anyone else get burned by stretching a blade past its prime or am I the only one who does this?
