Appreciation post: The old guy at the market showed me a trick for breaking down a shoulder
I tried his method of leaving the blade bone in for the initial seam separation... it actually made the whole thing way faster and cleaner. Anyone else have a weird little trick like that from a veteran cutter?

Oh man, those little tricks are the best... my grandpa taught me to use the back of a spoon for peeling ginger and it changed everything. It's wild how much easier things get when someone shows you the right way. Those old-timers really know their stuff.

Yeah, the "old-timers really know their stuff" part is dead on, @patricia558. I used to think all those kitchen tips were just extra steps. Now I see they're usually the fastest way to do something right. You can't argue with results.
