Hostel vs. couchsurfing debate, my Berlin stay made me flip sides

I was talking to a guy at a hostel in Berlin who swore couchsurfing is the only real budget move, said he paid zero for 12 nights there, but I had just dropped $18 a night for a bed and felt like I got more sleep and safety... He said my way was just paying for fear, so which actually wins for long trips, free but unpredictable or cheap but stable?
