Rant: people keep saying dried beans are cheap but nobody mentions the 2 hour soak
Everyone in this community loves to push dried beans as the big money saver. I get it, a pound of pinto beans is like $1.50 and feeds us for days, but nobody says out loud that you have to plan ahead or dinner is ruined. I tried the quick soak method once at 5pm on a work night and ended up eating cereal for dinner because they were still hard as rocks. Last Sunday I finally just started soaking them before bed, and now I keep a pot in the fridge all week for tacos and soup. Is there a way to make this work on a weeknight without the overnight thing, or am I just stuck planning my life around beans?
Oh man, I feel this in my soul! The cereal for dinner thing made me laugh because I have totally been there, standing in the kitchen at 7pm staring at a pot of beans that are nowhere close to done. In my experience the trick that works on a weeknight is a pressure cooker, if you have one, because it takes dry beans from rock hard to soft in like 30 to 40 minutes with no soak at all. If you don't have one, you can also soak them in the morning before work and they'll be ready by dinner, which is way less painful than the overnight thing. Your fridge pot system is honestly the smartest move though, so don't feel bad about planning around beans, a lot of us do it.
