Just hit 1,000 bikes serviced at my shop in Boise and realized half had the same cheap plastic pedals

That's 500 bikes with those pedals. I see them all the time on big box store bikes. Honestly, they work fine for most people just riding to the park or on a paved trail. They're not meant for serious mountain biking. It's like complaining that every car has cheap factory tires. They get the job done for basic use.

Ever feel like people forget what a basic bike is even for? You're right, most folks just need something to cruise around the neighborhood without spending a ton. It's like getting mad at a toaster because it can't bake a wedding cake.

Actually, those pedals are more like the ones on a $200 bike, not a $500 one. The cheap plastic ones on big box bikes are a safety issue because your foot slips off way too easy. A decent pair of metal platform pedals only costs about $30 and makes a basic bike way safer and more fun to ride.
