You're totally right about insulation being key... but drafts will wreck a cook just as fast. I found that out the hard way when my temps kept spiking. A tiny gap around the door let in cold air every time the wind changed. Spent more time babysitting the fire than actually cooking. Sealing those leaks made a bigger difference than adding another inch of insulation.

Honestly that draft issue is no joke. Had the same problem with my old smoker before I sealed it up properly. Tbh fighting those temp swings felt like a full time job sometimes.

Your note on sealing leaks making a bigger difference really rings true. What specific material did you use for that door gap? I've tried a few things that didn't last long.
