Warning: I saw a pitmaster in Austin last week who still uses lighter fluid for his brisket.

Honestly, after watching him struggle to get a clean smoke ring for three hours, I'm convinced that shortcut ruins the whole cook from the start, so has anyone else had to fix a buddy's meat after a bad start like that?

Wait, he was still trying for a smoke ring after using lighter fluid? That's the part that gets me, like trying to polish a turd. The taste has gotta be all chemical, no way that comes out. I'd just tell my buddy to order pizza and start over next weekend.

So does he actually think the smoke ring matters at that point, or is it just about getting a picture for Instagram? Like the meat's already ruined, who cares how it looks.
