The judge who told me my bark looked like a crime scene
Competition in Austin last month. My brisket got docked hard. Judge wrote on the scorecard that my bark was "aggressive". I thought that was a compliment.
Turns out I was running my smoker too hot at the start. 275 instead of 225. Bark was almost black and crunchy. Like burnt ends but not in a good way.
Now I wrap at 165 instead of waiting for 170. Keeps the bark dark but not nasty. Also stopped spraying with apple juice every hour. Too much moisture makes it weird.
Anyone else get feedback that sounded crazy at first but ended up making sense? What did you change?
