Showerthought: the old pitmaster at the Lockhart joint told me I was "polluting the pit" with mesquite, and it took me 3 cooks to get what he meant
He said hickory and mesquite together fight each other instead of layering, and after burning two racks of spares I finally swapped to post oak only and the bark came out cleaner than anything I'd made in 6 months, so now I'm wondering if anyone else got that same talk from an old timer or if it was just his personal grudge against mesquite.
