I dropped $80 on a fancy wireless meat thermometer and it nearly ruined my brisket
I was smoking a 14-pound brisket last weekend and trusted the new probe to alert me when it hit 203. The app showed it climbing steady, but when I went to check the bark, the meat felt way too firm. I stuck an old analog thermometer in as a backup and it read 190. The wireless one was off by over 10 degrees because the signal kept dropping. Has anyone found a reliable brand that actually works through a smoker's wall?

My buddy had the same thing happen with a pork shoulder last month. His new gadget kept losing connection every time he closed the smoker lid. He ended up with meat that was dry on one end and nearly raw in the middle. He went back to his old wired probe the very next day and hasn't looked back. It seems like a lot of these wireless models are built for open grills, not a sealed cooking box.

Man, that's brutal. Those fancy gadgets can really let you down when it counts. I've been burned before, so now I just use a basic Thermoworks probe as my final check. Why do they even sell those things if the signal can't get through a thin metal wall?

My cousin's Meater probe lost connection during a Thanksgiving turkey last year. It showed 145 degrees for like 40 minutes straight while the bird was basically raw. We had to push dinner back two hours while it actually finished cooking.
