Vent: I had to pick between a stand mixer and a hand mixer for my sister's birthday cake

I went with the hand mixer because my stand mixer was acting up, but the buttercream turned out grainy and split after about 15 minutes of mixing. Has anyone else had a frosting fail because their mixer just couldn't handle it?

Actually, buttercream splitting is usually from the butter being too warm or adding liquid too fast, not mixer strength. A hand mixer should handle basic buttercream fine if you keep things cool.

Read that buttercream can split if the butter's too soft, which lines up with what pat_fisher24 said. My own hand mixer works fine as long as everything is chilled. Maybe try colder butter next time.
