People insist on buttermilk for pancakes, but my yogurt trick makes them just as fluffy.
I learned to mix plain yogurt with milk when I ran out of buttermilk, and now I never go back.

My friend Sarah made these amazing blueberry pancakes last month (she used Greek yogurt and a splash of lemon juice). Her dad, who's made them the same way for forty years, actually asked for her recipe. He was so sure his buttermilk box mix was the only way to get them right. Watching him admit her yogurt version was lighter was pretty funny. It just proves the goal is a good pancake, not following a rule.

Honestly why do so many people act like there's only one right way to do a basic thing? I see this all the time with recipes and fixes around the house. Tbh your yogurt swap is a perfect example. People get stuck on the name brand or the classic method and miss that the goal is just to get a certain result. It's like they trust the old rule more than their own eyes. Ngl I love when a simple workaround ends up being better, it feels like beating the system.

Right? It's like some folks treat the old way like it's holy text instead of just one option among many. They'll follow a bad recipe to the letter while better ingredients sit right there in the fridge. The loyalty to a worse method is kinda funny, not gonna lie.
