I've never understood the hype around celebrity podcasts

They're usually shallow, and I prefer listening to unknown hosts with real expertise.

Nah, hard disagree on them all being shallow. Some celeb pods actually get into it way deeper than random experts. Dax Shepard's podcast has real therapists and scientists on all the time. Conan's show might seem silly but he has legit historians and authors too. It's more about the host knowing how to pull good stories out of people.

Remember catching an episode where a comedian interviewed a particle physicist and they ended up having this totally genuine, quiet chat about failure for like twenty minutes. It was on one of those usually loud interview shows, but the host just shut up and let the guy talk. Changed how I see the whole format.
