Visited a tiny kombucha brewery in Portland and their SCOBY room was basically a sauna

I stopped by this place called Wild Ferment off Hawthorne last weekend. The owner had this tiny back room with like 20 jars of SCOBYs bubbling away and the thermostat was set to 85 degrees. He said he keeps it that warm to speed up fermentation but I was sweating after 2 minutes in there. Has anyone else walked into a setup that felt more like a greenhouse than a brewery?

Bet your car would feel the same way if I cranked the heat to 85 and called it efficient.

Lowering it to 78-80° actually stops that vinegary taste from forming so fast lol
