I finally had to pick between a 5-gallon crock and a set of 1-gallon jars for my first big sauerkraut batch
I was making about 15 pounds of cabbage from the Portland farmers market and needed to decide on gear. I went with the big crock to keep it all in one vessel, but now I'm worried about contamination ruining the whole batch versus smaller, separate jars. Has anyone else faced this scale choice and what was your result?

Oh, the big crock gamble! I remember my first time using one for a giant batch of kimchi. The worry is real, but that single vessel fermentation has its own magic. I found the weight distribution and brine depth in a crock actually gave me less mold issues than my jar experiments. Just keep everything submerged and trust the process. My only real problem was figuring out where to store the thing for a month.

Seriously, a whole month of storage stress over kimchi? I just use a big bowl with a plate on top and it turns out fine every time.
