but like, what about the people who have never had GOOD restaurant dumplings? some places are straight up trash using frozen stuff anyway, so the baseline is already low.

Man, I feel that. I actually read something the other day about how a lot of "authentic" dumpling spots use frozen ones from Sysco, and it's totally hit or miss. Like, if you've only ever had those sad, dry ones from a chain place or a food court, you don't even know what you're missing. A good handmade dumpling with a nice thin wrapper and juicy filling is a totally different thing. It's like comparing a gas station burger to something from a real barbecue joint.
