Watch out for that 'quick oat flour' hack, it nearly ruined my stew
Last Tuesday I dumped a cup of rolled oats in the blender for a thickener, but forgot they were the quick-cook kind and they turned to paste in my beef stew within 10 minutes. My whole pot had that gluey texture and I had to scoop out half the veggies to rescue it. Anyone else had this backfire, or is there a better way to fake flour without a mill?

Funny you mention that, because the same thing happened to my sister but with soup. She tried the same trick with quick oats and ended up with something closer to wallpaper paste than chicken noodle. The only thing that saved it was dumping in a whole bag of frozen veggies to bulk it back up, which honestly just made it worse. She still brings it up every Thanksgiving, like it's a war story or something. Might be worth just keeping a bag of instant mashed potato flakes around for thickeners, that stuff never turns to glue.
